Peel the apples, remove the heart and the seeds. Cut each apple into small cubes and put them one by one into a salad bowl with the lemon juice. Macerate for 10 minutes. Drain and put into a saucepan with the sugar. Cook over a very low heat, stir from time to time. While the apples are still very hot, pour them into a generously oiled pie pan. Pack down well. Allow to cool. Turn out on a fruit dish and serve with cold custard.
